Lotus root

Hi everyone! I can't find lotus root anywhere. What's the best replacement food for it -- there's one recipe in the book (at least) containing lotus root. Thanks!

Hey Joanne - I can't find it either :(  Been looking for over a year!  Hope someone answers this thread!

Thanks Hazel.  I was looking for it in the fresh produce section.  Duh!  It is a sun dried product.  That gives me a better idea of where to search.  Unfortunately buying on-line from Eden doesn't work too well from Canada....I'll get my health food store to bring it in.

Check out an Asian market or store if there is one in your area.  I can usually find fresh lotus root for a pretty reasonable price (4 medium size roots for about $3). Since it's the ones I can find are not organic, I rinse the insides really, really well and peel the outer layer with a potato peeler.

If you can't get fresh, check Amazon for dried lotus root.  And I think lotus root is a cold-weather plant, so the dried version would be better in warmer months, anyway!
