Making Seitan
So I've already stated my love of seitan, it is the yummiest smiley-laughing.gif! I even tried on 2 separate occasions to make it with varying degrees of success. I'm just wondering if anyone else has made it? If so, is there an easier way then the hundreds of punches and all that kneading? It's not hard to find @ whole foods but I'm really a hands on kind of person, I'd like to make my own. Maybe I should get a food processor or something like that? I am open to any and all suggestions !

I just bought seitan for the first time tonight (and went to Whole Foods for the first time and it was wonderful!) and was wondering how you prepare it.  I'm not gifted in the kitchen, but would appreciate some semi-easy receipes to prepare it so that it is as yummy as people say it can be! Thanks in advance!!
I've made seitan twice now using a recipe from the Post Punk kitchen website:

It is made using gluten flour and there is only about 3 minutes worth of kneading. The first time I made it I followed the recipe to a 't', adding just a little more gluten flour when I was kneading it. The second time I used about half the soy sauce and replaced the rest of the liquid with vegie stock and it made a lighter tasting seitan. Both were equally as yummy! One recipe makes 3 pieces, I usually use one piece on the day that I've made it and then freeze the other two to keep on hand for quick meals in the middle of the week.

Do you thinks it is better to make your own or to buy it premade?  I bought it premade (cause I didn't know any better) and made it in some stirfry tonight and loved it.  Even my meat eating husband liked it... we thought it tasted a bit like chicken! Thanks for the link!
Not sure about homemade versus premade...I've not been able to find it in the shops in Brisbane, Australia, so I had no other choice than to make it myself. My meat-eating family were surprised how yummy it was!
if you buy premade does it mostly come as a sheet, because i got mine in a tub, it didnt work out so well
Health wise, I think making your own and buying it at the store is comparable. Cost wise though, it's much more cost efficient to make your own!
I definitely prefer homemade, we love Veganomicon's recipe, and if you don't like the hand kneading you could use a stand mixer with a dough hook.  Haven't tried the food processor personally, though it might work, too.
The only storebought version we have liked is Upland's Naturals, but it is more like crumbles or grounds, not chunks or slices.

where can you buy seitan?
im in Canada and i seriously cannot find it.
im getting really frusturated.

I also like the Veganomicon recipe.  The kneading is not bad and it's a lot cheaper!  Just buy vital wheat gluten.
Wow, those seitan sausages look awesome! Can't wait to try the recipe.
