We had edamame dip and rice crackers to start
Dinner was a spinach soup that I (literally!) whipped up in the Vitamix-it was bright green, very smooth and delicious-I sauteed 2 lbs of baby spinach w/ some garlic and olive oil and pureed w/ extra firm tofu and sodium free vegan stock-I added some salt and pepper to taste. Very simple and yum.
served with roasted potatoes-a rare treat as I usually only eat sweet potatoes and shaved brussel sprouts w/ vegan parmesan and truffle oil. Remove the stems from the sprouts and slice very thinly. Saute in a tiny spray of olive oil until just tender-add some truffle oil and a sprinkling of vegan parmesan-absolutely delicious!
And some good wine ;)
no dessert-too stuffed!
