Oyster Mushroom, Leeks and Peas Risotto

I made this recipe from The Kind Diet for dinner last night and it was fantastic!  I used a whole grain wild rice and added some fresh corn that needed to be used.  Also, I topped the risoto of with a few slices of avacodo which also needed eaten.  I added just a little extra of all the veggies to increase the veggie to grain ratio.  I will definately make this again.   

Next, I want to try the braised diakon.  I have never had this vegetable and am excited to try something new.
