Parsnips & Beets....
my Good Food Box consistently comes with parsnips & beets - any suggestions or recipes that use either of these items.
I have a recipe for borscht, looking for some other ideas.
p.s.  I think "parsnips" is the winner for cutest veggie name ever :)
Tanya, my hubby makes the BEST parsnip cakes EVER!  Kind of like hash browns, but with parsnip instead of potato.  I'll find the recipe and type it out for you, give me a day or two :-)

I peel the beets and quater them. Then toss them in salt, pepper, sugar, olive oil and thyme. Then roast - suuuper yummy and actually what I'm going to eat for lunch hehe x

I love roasting root veggies - just cut them into small pieces, toss with olive oil and bake (I do it for a loooonnnnggg time to get them super sweet and shriveled) - you can throw a spoonful of maple syrup into the mix before baking too - they come out so sweet you will be eating them like they are desert!  I just make a big bunch and keep them in the fridge to snack on -
