Hi! I'm not sure what happened to my original post, so my apologies if this is redundant. I wanted to suggest adding South Indian cuisine to your palates! My parents are from Chennai (and surrounding villages) and have lived in the US since the early 70's. I was born and raised in Texas, but have consumed my mother's wonderful traditional home-cooked food which happened to be mostly vegan (with the exception of ghee which is mostly used in snacks and homemade yogurt). There is a tremendous, healthy variety of meals, using all sorts of vegetables, spices, legumes, etc. If you’re not familiar with the cuisine, you could go to a local Indian restaurant, but I would suggest asking your south indain friends for hints, or ideally, cook it yourself so you can control salt and other ingredients. Give it a try!
I have a couple of books from the series I listed below, which should be a great start. The versions I have don't have pictures and to be honest, might a little confusing if you have never heard of the dishes before.

I of course use my mom as my recipe till, and will definitely share some recipes. Another good source is youtube. There are some amateur videos of indian women cooking indian dishes, but I'm not sure how many are south indian. Anyhow, it's a start!
I love cooking all kinds of veggies in an Indian style... and its easy to make...
heat any vegetable oil, fry 2 diced onions till golden brown add 2 tomatoes and cook for a minute. (you can also add in a green chili at this point) and add in whatever veggie you want with salt... and let it cook on a very low stove till completly cooked.
You can do the same thing for all kinds of veggies... like spinich, patato, lady fingers, cabbage, cauliflower, or even a mixture of veggies together like patatos cauliflower peas and carrots.
Just remember not to add in any water, because all these veggies cook in its own water.
This can be eaten with any kind of bread or roti
