questions about coconut milk?

What am I supposed to buy.  Are you supposed to drink it?  I bought some canned "Conchita Coconut Milk"  I haven't opened it yet.  I was going to make some ice cream with it.  ( I was going to replace the soy milk in this recipe with it.  http://www.browniepointsblog.com/2005/09/22/chocolate-peanut-butter-tofu-ice-cream/)

Then I did some reading online and saw to drink it it had to be mixed with water or something?  Do I need to mix this with water to make the ice cream?  Or is that just to drink it.  Should I have bought something besides the cans?  Enlighten me please?  Thanks!

I'm not familiar with Conchitas coconut milk but if it says to mix with water than I would if I was the one using it because it seems like it's concentrated. The one I buy is refrigerated from So Delicious and used just like any other nondairy milk where you just shake it up a bit and it's good to go.

The one you have seems fine to use though and then maybe next time you can look for the coconut milk that doesn't need to be mixed with water depending what you want?

Conchita is the brand

I meant to write Conchita. I'm sorry about mispelling it wrong. :-)

I think you got the canned coconut milk whichi is used for cooking and baking. It's not the same thing as the milk-alternative. If you want coconut milk for cereal, drinking, etc, you would want the So Delicious brand that kitty mentioned.

I adore the So Delicious brand, and they have coffee creamer that blends into coffe much better than almond and soy milk, and they coconut milk ice cream? Sooooooo Gooooooood!

Try Purely Decadent coconut milk ice cream! So good! I think it is creamier than other non-dairy ice creams.

Im not sure about coconut milk either, but I will be trying that recipe this weekend!  That ice cream looks FAB!  Thank you for sharing!

The canned coconut milk is for cooking.  I buy Silk Coconut Milk for drinking and cereal - they  have original and vanilla.

Hi,

Looks like this is an old thread but I've recently started (sometimes) buying Coconut Dream. I'm in NYC and they sell it in a lot of stores here--grocery stores and convenience stores too.
