I love quinoa, especially the red variety. I like to keep some cooked and in the fridge, so I can use it for a variety of dishes. I kind of accidently found a really awesome way to reheat for a quick side dish on a busy night. It is so good!
What I do is add about a cup (if I'm cooking for one) of already cooked quinoa to a lightly pre-oiled skillet. To it, add about 1 tbsp of earth balance buttery spread, 1-2 heaping tbsp of nutritional yeast, garlic powder, and onion powder. I use a silicon spatula to make sure the dry ingredients and the spread are mixed all the way through. It sizzles! Cook over medium heat until its all the way heated through. Top with sea salt and fresh ground pepper.
It is incredible- delicious and nutritious. I usually eat it with ton of steamed mixed veggies. Its a full complete meal, relatively high in protein, and can be ready in less than 10 minutes.
