I like David's pumpkin seeds, the ones still in the shell (it takes time to unshell so you don't end up eating the whole bag), I also like airpopped popcorn drizzled w/olive oil, Trader Joe's Everyday Seasoning, salt & pepper to taste. Rice crackers w/jalapeno hummus. Or melt some vegan cheese in a corn tortilla & top w/fresh salsa. Leftover broccoli (artichokes, carrots) dipped in a mixture of vegannaise/dab of soy/dab of sriracha sauce, more sirachi if u like spicy....yum!
My son makes his own pickled carrots/onion/jalapeno mix. If u make a batch u can have it to snack on for a week or so. I've been wanting to try this & adding cauliflower, maybe redbells, too....d
