St. Pat's brunch/Shepherd's Pie recipes?

Next week, my office is having a St Patrick's brunch. I volunteered to bring a vegetarian shepherd's pie and was wondering if anyone had a tried/true recipe? Or any other great Irish recipes? I stay away from dairy, but for the purpose of feeding a non-discriminating crowd, I'd consider "flirty" recipes. Thanks!

The rest of my coworkers are bringing:
Corned Beef and Cabbage
Deviled Eggs
Roasted Root Vegetables
Fruit Salad
Irish Caramel Cheesecake

Sounds good, but I want a veggie shepherds pie that will knock some socks off!

The last time I made a veggie sheperds pie, it was seriously wicked good- but alas I was only throwing things together! I can tell you roughly what went in, and maybe you could experiment too! Here goes:
I cooked up some lentils with a couple of squares of rapunzel vegan bouillon, and while they were cooking I sauteed onions with garlic and cumin. (add other spices as you like). When the lentils were just about done and the water was almost  all evaporated, I added the onions. You can also add some root veggies, maybe parsnip or turnip? yum. I am also thinking come crushed tomatoes- drained? cook that all up whilst boiling your potatoes, when they are done, add garlic, earth balance, soy/rice milk (whatevs)-then mash and cream it all up to yummy mashed potato goodness...
add lentil mix to casserole dish, use an ice cream scoop to place the mashed potatoes on top (that's sort of the real exciting part- makes it taste better and it looks so sweet when finished).
Bake in a 350 oven for as long as it takes for the potatoes to turn golden on top. Garnish with something pretty and tasty. Voila. Hope this is not to haphazard- anyway it will look and taste amazing! Happy St. Pat's
