super hero working moms, what do you pack for lunch?
I am struggling with what to pack for lunch when the only thing available to heat something up is a microwave.  Do you just say, the hell with it and microwave the nutrients out of that quinoa squash and veggies you worked so hard to cook the night before or do you have cold stuff you can tell me about that works well?  I haven't tried all of the recipies in the book yet but the ones that I have tried that I am eating every day - miso soup, squash & beans and veggies all have to be heated to be palatable.  Any advice would be greatly appreciated - I have been eating edamame every day for lunch and it is getting old....
I love a whole wheat pita with quinoa, balck beans, kale, salsa, avocado....
Sometimes I stuff a pita with Mediterranean cous cous, hummus and kale.
Or a pita more mexican style with quinoa, black beans, kale, salsa and guacamole.
Love a pita with lemon quinoa and kale dressed with lemon juice olive oil, some dried cranberries and pine nuts.
On the side I bake a sweet potato in the morning in the early AM and wrap it in foil and it's still warm at lunch.

I've actually gotten use to eating things cold.  I think it will be more refreshing in the summer than winter however... otherwise if there are things I like hot, I will heat on the stove before work and put in a thermos.  It mostly stays warm until lunch.  I have heard other people taking a hot plate to work with them.... I guess it depends how much time and dedication you have :)  Good luck!
I'm not a mom but a full time student and employee. I'm busier at night so I tend to just have an apple or something similar and make lunch a bigger meal. I cook a big pot of something over the weekend that's reheat-friendly and just use the microwave at work. Some of my favorites are: barley & lentil soup with kale and big chunks of random veggies in low sodium veg broth, spaghetti squash with homemade sauce (onions, bell peppers, tomatoes, garlic, gimme lean sausage) and a side of steamed swiss chard, black bean chili (with soyrizo, onions, jalepeno, peppers and broccoli) and some avocado. Hope you find some yummy options!
Cassi, those pita ideas sound delish!!!  I tend to make sauteed or steamed greens with onion, garlic and lemon the night before and eat those cold.  Then I usually reheat homemade soup (black bean, butternut squash, lentil, etc) at work in the microwave.  I'll also sometime just pack a big salad with whatever veggies I have in the fridge and bring that in.
Have you tried the "tuna salad (kinda)"?  It's superhero, and it's supposed to be cold since it's a mock tuna salad.  I've brought it to work before in a plastic container, then when I'm ready to eat, I spoon it into a whole wheat pita.  Also, the quinoa with pine nuts and basil tastes good cold. 
Yesterday, I roasted an assortment of squash - thick slices (butternut, yellow, zucchini) and today I am eating that - it's so tasty cold! Also I have a cold quinoa "pilaf" with black beans, red peppers, green onions. Really good cold too.

I wouldn't say I am a super hero yet, but I am working on it!

I make the Rustic Pasta, Healing soup and Kobacha Squash stew and then keep them in little glass pyrex dishes.  I put them in the microwave for just 10-15 seconds, wait a bit, 10-15 more seconds and it just takes the chill off and is perfect eating temperature. Its so brief and low heat that I dont feel like I am cooking the nutrients out.  Maybe I am wrong?  .....whoops!!... you wanted Superhero...cant remember if these are superhero or not...
