Superhero Camping ??
Has anyone been camping--or even traveled--& had to pack food for a superhero/vegan diet?  We're going for a few days with a fairly large group.  My mom & fiance's dad are preparing most of the food for everyone, which means they will be eating dutch-oven chicken, nasty junk food & dairy&sugar-based salads.  I don't eat processed foods (ie not dogs & veggie burgers) but want healthy & delicious vegan food, as fresh & as close to superhero as possible.  I'd also like to be able to share so they can see how balanced & delicious my diet is.  I'm thinking couscous is an easy grain, since all I need is boiling water & a lid; beans will keep in the cooler; baked tofu & fresh fruit are good snacks; maybe I could roast vegetables over the fire...  Suggestions or any fun camp cooking recipes out there or a yumminess I can make before hand that will keep?

I have suggestions for the dessert that you can make ahead of time. When I went on my first trip after going Vegan, I made the crispy treats...varieties of them, I made superhero version for myself to eat and I made the regular version to share with others. People asked me, "these are healthy?"  :)

Bring dried fruits for the breakfast porridge, the ume plums can be stored in cooler ready to be used for Nori burritos.

Trail mix is a fun treat, or just some dried fruits and nuts to snack on and share. I have a food dehydrator and love making vegetable chips, it's like junk food but so much better. Kale chips are definitely a favorite, even for those that like the nasty foods.

You can bake a potato in foil in the fire, roasting other vegetables this way would be excellent too. I've made pizza on the camp stove with pre-made crust, it was really tasty and you could use whole wheat english muffins or pita instead. We also had a sandwich press that you could grill in the fire, we made pies by adding fruit filling. That was a lot of fun.

Luckily  superhero foods are really simple and will easily translate into meals you can bring camping, what's more simple than camping? You'll only be gone a few days, if you have a cooler with ice pretty much anything will be kept fresh for that time.
