Superhero meals for dinner..and my husband LOVES it! (and he is a meat eater)
So for the past 3 nights I have  made superhero dinners for my husand and myself. I told him beforehand that I'm not making 2 meals anymore (I sued to) and that he should try them out. Tonight I made nori wraps with bulgar, alvocado, apples and cooked kale. He ate more than I did! I can't belive it. Who knows? He may start asking me to fix his lunch to take to work when I prepare my superhero lunch for the day!

Renee, glad you've introduced your husband to healthier eating. And great that he likes it, too. I'm still cooking a lot of double meals, or trying to opt out of the meat/animal products for myself while still making the food my husband is used to eating. My son is interesting in trying out my "crazy veg" ways, though, so he may be able to flirt.

Your nori wraps sound good. I don't think I've paired apples and avocados before, but the creamy and crunchy combo sounds yummy!

awesome! i made a veggie stir fry for my boyf the other day.... and he seemed to like it. hes apparently an insanely picky eater too, so im feeling impressed with myself. it was pretty much superhero too, aside from a very small amount of sugar.
hes starting to talk about maybe going vegetarian and i think hes already stopped eating dairy. im so happy hes considering this way of life

My husband is also a carnivore. Fangs and all. :) He has been loving the last 2 days of superhero recipes. He calls them "Superhuman Food." Way to go!
