superhero recipe: roasted green beans with shallots

I have been on a huge green bean kick lately, I've just been sauteeing them with a little olive oil and salt and then putting toasted slivered almonds on top.  Love the idea of adding the shallot!  YUM.

I too, make a mean concoction of green beans (first steamed briefly in microwave to make tender), then fried stovetop w/cut up regular onion & slivered almonds added also. For variation, sometimes I fry up a handful of sliced mushrooms in another skillet--then combine dishes when both are done.

Dunno how different a shallot would taste as opposed to the regular [cheap] onion I use!?!

I steam mine and cover them with a little marinara sauce.  If I feel like being fancy I'll wrap them inside some thinly sliced eggplant rolled up and roast them with some other veggies and whatever sauce I happen to be in the mood for that evening.  Occasionally I dice them up relatively small and toss them in with black beans and some mexican spices to toss in my tacos to replace the meat. 

OOOO I love this recipe - so simple and delicious! I added a little fresh crushed garlic :)

I sautee them in olive oil with garlic and onion powder...and usually mix in some breadcrumbs...so yummy!

sprinkled with lemon juice and chopped toasted hazlenuts!

I LOVE green beans and Alicia's recipe looks fantastic!  I usually just steam them, add a bit of olive oil and black pepper-simple and yummy!!

My kids love it when I steam French green beans and then quickly sautee them afterwards with a tiny bit of Earth Balance and Simply Organic garlic salt...they call them the french fries of green veggies.  They are always very happy to eat their veggies when I make these.

I found a great recipe this past holiday season.  I've always made the green bean casserole, but this year I made it vegan.  I'm the only veggie at the dinner table, but EVERYONE loved the green beans!

I just made green beans the other night! I boiled them for a couple mins then sauteed them on low/med heat in olive oil with some chopped up serano peppers, black pepper and finished them with a store bought sweet/spicy garlic sauce. It turned out awesome and my husband loved it!

Cannot wait to try this! Looks so delish!

I love them roasted too!!!!! YUM. And better yet, is the left overs, kept COLD. I enjob them the next day when I am making lunch or dinner & truly famished.....There's nothing tastier or healthier than to pop those in your mouth!
