tempah and seitan

HI im wondering where i can find tempah and seitan, I live in calgary Alberta and iv checked our natural food stores, and it seems that all they carry are tofurkey marinated slices or bacon but nothing more than that if anyone knows where i can get tempah or seitan please let me know even if it means having to order online, also nobody here seems to know what seitan is and iv been told that its a wheat protien and they only carry it in packages that looks like dry cream colored wheat chunks but when i looked it up, the pictures online looked like it came in block form in the refrigerated section please help i have no idea where to find these items and would love to make some recipes with them

Seitan is pretty easy to make if you can find vital wheat gluten.  I try to make a batch once a week or so.  I use the recipe from Veganomicon, but there's a recipe for seitan right on the package of Bob's Red Mill vwg.  It might seem pretty involved but it is really forgiving to substitutions and you can season the heck out of it or keep it plain!

Hey Echo, I'm also in Calgary.  I've had no problems finding tempeh at both Planet Organic and Community Natural Foods in the refrigerated section as well as the freezer.  Regular tempeh comes in a little green box and the brand name is "Green Cusine", but it comes in other flavours too.  I can't say I've looked for Seitan but I would think at least one of the two stores carries it...

I also picked up a packet of a pre-marinated curry flavour tempeh and for some reason I think I found it at Superstore... I can't remember for sure so don't quote me, it may have been at Planet Organic.

Hi Echo when I buy seitan it's from WholeFoods here in L.A.  I would make your own for sure. Trye this recipe from "The Vegan Zombie" He makes videos on how to make just about anything. (very amusing as well.)   You can use Setian for just about any recipe as well as sandwiches etc.   Let me know what you think. He also has other great dishes on video.
