Time for cooking?

Hi all... about 6 months into this new lifestyle and loving it!  However, since the birth of my second baby this past May (second in 18 months!) I am having so much trouble finding the TIME to cook!  I love the recipes from The Kind Diet, and have found some that are quick, but I am just really struggling with finding time to cook the way I want to be cooking!  Anyone else feel the same or have suggestions?

Get a pressure cooker.  Cook way more beans and grains than you will need and freeze.  You can also cook extra freeze-tolerant vegetables, such as green beans, in bulk to freeze.  Cook extra veggies to use the following day--for example, have a stir-fry and use the extra veggies the next day in a hummus wrap.  On a busy day, I might defrost black beans, mix with quinoa and salsa fresca, made an easy salad and call it a day :)
