I was making it just for me, so I halved the recipe. I also used nutritional yeast instead of parmesan. I am sure I will be making this one again.
I made this dip with a few changes and it turned out great. I subbed nutritional yeast for the vegan parm. (More Vitamin B12!) And sprinked some back peper and Daiya mozzarella style on the top five minutes before I took it out of the oven. This dip is great for satisfying a cheese craving.
This dip was one of the first things that really made me believe I could do the vegan thing! It really does satisfy that craving for the creamy/cheesy stuff. I make it with my homemade parmesan replacer which is basically 2 parts nutritional yeast, 1 part walnuts, and some salt thrown into the food processor until crumbly. I always serve it to guests and everyone loves it!
Been craving this again..will have to make it this weekend for our holiday gathering. Thanks for the tip on the nutritional yeast substitute...good idea!
We added a finely chopped jalepeno and some chopped frozen spinach. It was delicious and a hit at our Thanksgiving party. Would have to say I liked it the second day better just slightly heated up as opposed to fresh out of the oven.
