There are very similar recipes like the tuna or egg salad recipe, but my mom and i have made this one for years...cut firm or extra firm tofu into chunks,marinate shoyo and bake for 30 min or so, cool, add vegenaise, celery, cashews, grapes, pineapple maybe onion or scallion...chill and serve on bed of greens or really awesome bread!

What temp do you bake the tofu?
I would bake it at 350 or 400... it really doesn't get over done unless the heat is too high and the tofu dries out with the marinade.. i actually like mine a bit more done.. would also work with soy chicken strips, but i love the tofu... a great thing to serve for brunch or lunch w friends............ oh, i add a little water w the shoyo to cut the salt a bit!
