Vegan at College

Hey everyone, I read the Kind Diet about a month ago and it has made me want to do this more than ever. Ive been a vegitarian for 6 weeks today and I have been trying to do vegan at least 2 or 3 times a week. It was easier while I was at home for Christmas break but im in my last semester at college so Im just trying to stick it out here for a few more months. Does anyone have any suggestions about any easy and relatively cheap meals and snacks? Ive already switched over to Earth Balance and rice milk but im just about to try out some of the meat substitutes. So far Im so happy and very excited to see how this goes!

I find that I can pair brown rice with almost anything. And the rice tastes good after being in the fridge overnight. I put veggies and polenta in the rice, or for breakfast put some maple syrup and graham cracker crumbs (sounds weird but it's good!) And it's relatively cheap. It's hard to be vegan on a tight budget, like in college, but if you plan out your meals for the week it's easier to stick to and cheaper.
i agree with anne...it's hard to be vegan on a budget but rest assured it can be done! do you have a kitchen to work with? if so, i'd make big batches of food and freeze them in containers so you can always grab stuff on the go and not compromise nutrition when you're cramming for those exams.

see if there is a food co-op in your area. that would really help you out. also, what i do is make veggie snack packs myself. so i'll combine carrots, celery, cauliflower and then some vegan spread on the side so i always have that if i'm hungry. another good favourite is vegan bread, tofurky, mustard, veganaise, lettuce and whatever other fix'ns you need.

if you have a juicer (see if you can get one on a used website), mix a whole bunch and then you'll have a powerful mixed drink on the go!

Thanks for the help Anne and Jessica! I do have a kitchen and Ive been trying to cook more and more just to gain the experience..I usually make some kind of veggies or beans with rice and occasionally if i can find the ingredients to make some fun stuff from Alicia's book. Fortunatley the dining hall at my school also has entire sections dedicated to vegans so whenever i I dont feel like cooking I can grab a bite there. So i think along with the support from everyone here Ill be able to do this here and I am defnetly going to take into considerating what you guys have told me! Thanks again so much! Ill let you know on my progress!

Cassie, I am finding hard doing this without you. I don't mean not eating meat. I mean staying away from CHEESE. I know we can do this. Love you MOM
cheese is a hard one! after a while being out of your system the craving for it kinda dies. like giving up smoking or something.
casie, i am in the same boat as you. been vegan for a while but at first i wasnt doing gmy own cooking (was at a university hall of residence) where they did our food for us. they had good vegan food but now have to learn how to do it myself... and on a budget. dahl with wholewheat naan bread or rice or somehtings quite cheap if u have the spices needed. i really like stir fry and am getting into asian cooking. is there a farmers market near where u live?
