Vegan Diet and Type I Diabetes

Okay, I am not vegan yet.  I have recently read Alicia's book and am definitely flirting with the idea.  I have type I diabetes, an autoimmune disease, which means that I could not have prevented it.  I was 44 years old at diagnosis and have lived with it for 3 years.  I carb count and am on insulin.  I would really like to give this diet a try and have spoken briefly with my diabetic educator who did not give me any red flags about going vegan; was even supportive.  But, I would like to hear from other type I diabetics who are vegan or at least vegetarian.  Anyone out there who could give me some extra encouragement?  Thanks, so much.  I am new to this, but I gotta start somewhere.   

hi janet! so I've been vegan for a while now probably about a year and a half. Just first off, the vegan lifestyle has been amazing for me so far in my most stressful year of school yet! My skin no longer breaks out, I'm gradually losing stress fat without dieting, and I don't feel weighed down after meals or anything! 

I do not currently have diabetes; however, my grandad and my cousin both do, so I've been around it my whole life. Type 1 runs in my family through every generation, so that means I'm going to get it sooner or later and right now I'm in the risk age of getting it, so I've been mindful of eating diabetic-friendly things :)

With the vegan diet as shown in The Kind Diet if you eat properly, you should have no problem getting the 2 part vegetables 1 part carbs and 1 part protein. As for protein I generally stick to grains, beans, nuts and seeds, and meat replacements (trader joes makes excellent meatless meatballs and fake chicken strips). 

As for blood sugar, I've found that by eating whole and natural vegan foods like quinoa, rice, beans, plenty of vegetables, etc. keeps my blood sugar level and does not give me spikes or crashes like dairy or white sugar does.
