Vegan French Toast

I read on an earlier post that someone's husband said some things just shouldn't be vegan, one of those "things" was french toast.  I beg to differ.  I picked up this great book called The 30 minute vegan by Reinfeld and Murray and it has a delicious vegan french toast recipe.  My boyfriend said it was better than traditional french toast.  Here it is:

Maple-Almond French Toast

Vegan Butter or oil of choice
10 slices of bread of choice
French Toast Batter as follows:
1 1/4 cups soy, rice, coconut milk, or soy creamer (I used soy milk)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice (I used dashes of nutmeg, cloves and ginger)
2 tbsp almong butter or tahini or combination of both (I used tahini)
3 tablespoons flour or your choice
1/2 teaspoon vanilla extract
1 tbsp pure maple syrup, sucanat, organic sugar or sweetener of choice (I used maple syrup)
1 tbsp ground flaxseeds (optional) (I didn't use this)

1. Preheat a griddle or large cast-iron pan over medium-high heat. Combine the batter ingredients in a large bowl and whisk well.
2. Place a small amount of vegan butter on the griddle.  Dip the bread slices into the batter, coating both sides well, and place on the griddle.  (Three or four slices should fit simultaneously.)  Flip after a few minutes, to prevent sticking.
3.  Cook until browned on both sides, about 5 minutes, adding more vegan butter to the griddle if necessary to avoid sticking.  Rewhisk the remaining batter between dipping the bread slices.  Serve the toast with toppings of choice.

Banana Oat French Toast

Makes 6 slices

Serve this delicious, heart-healthy French toast with maple syrup and fresh fruit.

1 cup fortified vanilla soymilk  (I used unsweetened almond milk)
1/4 cup quick-cooking oats
1 medium banana
6 slices whole-grain bread ( I used Ezekial Bread) 
1 vegetable oil spray

Combine soymilk, oats, and banana in a blender. Process until completely smooth, 2 to 3 minutes. Transfer to a shallow dish.

Soak bread slices in batter until soft but not soggy. The amount of time this takes will vary depending on the bread used.

Cook over medium-high heat in a vegetable oil sprayed non-stick skillet until first side is golden brown, about 3 minutes. Turn carefully with a spatula and cook second side until brown, about 3 minutes.
