Vegan Mac & Cheese

4 quarts water

1 tablespoon sea salt

8 ounces macaroni

 4 slices of bread, torn into large pieces

 2 tablespoons + 1/3 cup non-hydrogenated margarine

 2 tablespoons shallots, peeled and chopped

1 cup red or yellow potatoes, peeled and chopped

1/4 cup carrots, peeled and chopped

 1/3 cup onion, peeled and chopped

 1 cup water

  1/4 cup raw cashews

  2 teaspoons sea salt

1/4 teaspoon garlic, minced

1/4 teaspoon Dijon mustard

 1 tablespoon lemon juice, freshly squeezed

 1/4 teaspoon black pepper

 1/8 teaspoon cayenne

 1/4 teaspoon paprika

What You Do:

1.  In a large pot, bring the water and salt to a boil. Add macaroni and cook until al dente. In a colander, drain pasta and rinse with cold water. Set aside.

2.  In a food processor, make breadcrumbs by pulverizing the bread and 2 tablespoons margarine to a medium-fine texture. Set aside.

3. Preheat oven to 350 degrees. In a saucepan, add shallots, potatoes, carrots, onion, and water, and bring to a boil. Cover the pan and simmer for 15 minutes, or until vegetables are very soft.

4.  In a blender, process the cashews, salt, garlic, 1/3 cup margarine, mustard, lemon juice, black pepper, and cayenne. Add softened vegetables and cooking water to the blender and process until perfectly smooth. In a large bowl, toss the cooked pasta and blended cheese sauce until completely coated. Spread mixture into a 9 x 12 casserole dish, sprinkle with prepared breadcrumbs, and dust with paprika. Bake for 30 minutes.

Mark, that sounds yummy!  I love vegan mac and cheese.  I just use rice pasta (can't eat wheat), Earth Balance margarine, shredded Galaxie vegan mozzarella, pepper and done!  Soooo good!

Thanks for the recipe! Looks good:) So did you end up making the cashew cheese? I have some in the fridge that has cayenne, chipotle and chili powders, plus garlic, onion, salt, pepper etc... I'm thinking I could kinda use it in this recipe...Maybe just add some margerine and mustard to it and then add everything else from this recipe..... mmmmm yum! Can't wait to try it.

I use earth balance also. I did notice that Smart Balance butter is now vegan ! Very cool.

Hey Mark:) Do you mean the cashew cheese or the mac n' cheese? I haven't tackled the mac n' cheese yet.... but the cashew cheese turned out decently... although it doesn't really taste like cheese... haha. I mixed some with sour supreme and salsa last night and ate it with some que pasa torilllas... mmmmmmm... it was good!! My BF uses it on his wraps for lunch and likes it a lot :)  (he used all the spicy stuff I had, so now all I have is the dill batch I made..... so that might not be so great in mac and cheese... haha)

I made this dish and it was amazing!  My partner who is not vegan thought he was eating the real thing. I deviated from the recipe just a little - as I'm not a huge fan of a lot of bread crumbs. This was my first time making cashew cheese. It was really easy to make too. 

I made this today and it is fabulous!  I'm having a hard time not picking at it until dinner! Serving it with a salad made with arugula! Yum!  Thanks Mark!
