Hi, I have been vegan for a month today and feeling great. However, I hate cooking and really take the simple, easy approach. I eat a lot of health food pre-packaged foods (Amy's, Aunt Trudy's, evol wraps, etc...). I notice a lot of people who end their vegan diets for "health" reasons. I truly believe veganism is the healthiest diet, but I want to make sure I do it right - FOR LIFE. I don't want to get tired or sick or anemic, etc... I don't count anything - calories, protein, carbs, etc... and I have no ideas if I'm taking in enough vitamins. Please tell me the ABSOLUTE MOST IMPORTANT things I need to make sure I'm getting for a healthy life. And I hate cooking. Thank you!!! Kate
