Vegan Portable Lunch Ideas?

Hi there! Just wondering if any of you have some good (cold) portable lunch ideas to share. I will be commuting to university for teacher's college starting next week and need some good stuff for my breaks between classes to bring with me. Any suggestions would be greatly appreciated. Thanks! :) 

Do you have access to a fridge? I used to bring a tupperware of brown rice, steamed veggies and tofu-with a spicy suace on the side. easy to eat and filling.

 

Or make a great wrap w/a sprouted grain tortilla, hummos, sprouts, tomato, cucumber and avocado....

 

If you have a microwave soup is a great option too.

Wraps are great also.

Nori wraps (featured in the Kind Diet) are always quick, easy, and portable. I generally just put hummus, brown rice, lettuce, and cucumbers in mine, but the possibilities are endless.

Another good option is a "tuna" salad sandwich. Mix 1 can of chickpeas in a blender or food processor until flaky. Then combine with 1/4 cup Veganaise, 1 tbsp Dijon mustard, and celery (to taste). Spread it on your bread of choice and you're good to go. *Note: It keeps fairly well and tastes even better cold, so don't worry about making it ahead of time and leaving it in the fridge.*

Love the tiffin, I think I'm going to order myself one as a little 'back to school present.' 

i bake slices of tofu sometimes and you can put them in sandwiches or wraps.

I've been trying to come up w/ some creative lunches w/o using the microwave as well!

So far my favorites are:

cold soups/gazpacho.  Check out this Green Gazpacho reiepe from VegNews. (It stays good for about two days in the fridge)

Grains w/ a side of steamed greens and a few slices of pickled radishes

I've found the key to the "cold lunch" endeavor is to keep it interesting!

For me, bringing a few small side snacks is a must. (it's usually a veg to snack on w/ hummus, or seitan "chicken" salad)

I started back at school recently and I've had the same dilemma!  The good thing about vegan food is it can get to room temp and still be safe to eat most of the time. I usually just eat out of a tupperware container and I find that leftovers are the most filling, and keep me full for a while.  Here is what I've been taking so far:

Leftover veggie pasta casserole

Cooked plain quinoa with a chopped up leftover homemade black bean burger with salad dressing

Tofurky and veganaise sandwich (not sure if this is safe for an extended period of time but I eat it within a few hours and I'm still alive!)

Tofu fried rice leftovers

PB&J with soy yogurt

I keep soy yogurts in the freezer and by lunch time they are defrosted and still cold! They also keep the rest of your lunch cool too if you need it.

I also pack some kind of snacks like lemon or ginger snaps, or a homemade muffin. This week it was Almond Quinoa muffins YUM!

I bake falafel patties and pair it with pita and veggies

Lara bars are good too

sometimes I will just buy a premade item (such as veg sushi, veg wrap, etc) from trader joes, whole foods, sunflower, the co-op, etc.
