whar will you have for chrismas?

I know we´re pretty close to christmas eve, so I guess most of you will have already decided on how to treat yourself and your loved ones during the holidays.. well, I didn´t expect it but am now actually offered the chance to cook for my omnivore family.. yay!:-)   but then again, what to choose? please help by posting your menus! and.. happy holidays everyone!:-)

I come from a family of meat eaters.  But I will be bringing stuffed acorn squash with me to share.  Yummy, pretty, and simple.  Cut in half, scoop out seeds, brush insides with olive oil, s&p, and bake (cut side down on a cookie sheet) at 325 until soft.  Stuffing will be a mixture of sauteed raw cashews, carrots, celery, onion, thyme, rosemary, mixed with basmati rice, wild rice and lentils.  Topped with panko, and baked again until warmed through.  Really, you can use any kind of stuffing.  Lots of recipes I've seen have dried fruit in it if you like the sweet and savory thing together.

My in-laws came over for Christmas. I made hallelujah acres nut "meat" loaf, shepherd's pie, potato latkes, broccoli and "cheese" sauce, arroz amarillo, deep fried cauliflower, salad, chocolate chip cookies, pumpkin cranberry apple pecan everything bread, and raw apple pie.

I did include velveeta cheese sauce for the hubby and an Amish made Pumpkin Roll which was vegetarian. That was in place of a birthday cake for him.

My inlaws thanked me for taking the time to make so much. My father in law was satisfied and full :0)
