What's for dinner tonight?

I'm curious to hear what our last meals of the day will be. :-) My sister wants to try Broccoli and Mushroom Alfredo tonight... I won't argue with a night off!

Lentil Stew from TKL - made it Sunday night and still have leftovers!  A bowl of that and some steamed kale with umeboshi vinegar.  (I had that for lunch too :)

Tonight I'm making poblana peppers stuffed with a mixture of black beans and corn relish (Trader Joes...it's yummy) and topped with rice chedder cheese and salsa.  Spanish style brown rice on the side.  This weekend I'm making a eggplant lentil stew.  I got the recipe online.  Last night we had vegan mushroom lasagne and sauted wild greens. The greens were from the local farmer's market.  I can't get enough sauted greens.  One of my favs!

I bought fresh bread today, so I made a really thick pasta sauce (with fried onion, mushroom, zucchini, garlic, loads of tomatoes and a little premade tomato sauce). Then I put some earthbalance butter and a little garlic on the bread, toasted it and scooped up the sauce with it.... Such good comfort food for this cool rainy day!

Oooh, everyone's meals sound sooo good right about now!  I made a Citrus Broccoli Stir-Fry that came together in under 10 minutes!  Here's the link to it:

Making a lentil pasta sauce to serve over farfalle & will serve w/either some broccolini or a big salad or both. Hope to share this recipe soon under Recipes.

Last week I made the lasagna from Appetite for Reduction & it was really, really good! It made a lot, so we had it for several meals. The weather's been a little cool lately, so I think this wknd I'll be making a nourishing, filling soup.

I ate Udon noodles with roasted tomato dumpings, vegan peking duck, curry tofu, and about two cups of beans. All from Whole Foods lol, I'd love to have the talent to cook all that myself!

Alicia's Magical Healing Soup!  This soup is great for the digestive system's smooth functioning and if you want to lose a few pounds.  I make a huge double batch and start my dinner meal with it all week.

I made Eggplant Chana Masala from TKL and Hot Rice with Cold Lemon, Basil and Tomato from TKL. We recently joined a CSA so I was able to make a nice salad too. My husband didn't even miss the meat from his meal and asked for seconds! Both recipes made tons of leftovers!
