
Kind Lifer Caseydog posted this recipe for a kind version of ‘Gnocchi with Spicy Vodka Tomato Cream Sauce’ in the forum, and it looks and sounds so delicious! I love gnocchi! Can’t wait to try this recipe.
Caseydog wrote, “I love gnocchi (Italian potato dumplings) and some warm pasta sounded nice on this cold rainy night. I have been craving the indulgent vodka tomato cream sauce that I have tried at restaurants. Well, I have lightened up this version, making it almost fat free and vegan.”
I just love when people take recipes that they used to love, but change them to make the dishes healthier. I love delicious food that not only tastes great, but is also kind to our bodies! Here is the yummy recipe... Let me know if you try this! And thank you Caseydog!

INGREDIENTS
1 pound of gnocchi
1 tablespoon olive oil
2 teaspoons parsley
1/2 teaspoon hot red pepper flakes
4 minced garlic cloves
A 28 ounce can of whole tomatoes
1/2 cup silken tofu
2 tablespoons of vodka

STEPS
Put the gnocchi in a pot of water, and bring to a boil.
Boil for 3 minutes, and then drain and set aside.
Sauté the olive oil, parsley, red pepper flakes, and garlic cloves in a medium saucepan.
Add the can of whole tomatoes, and bring to a boil.
Puree this in a blender along with the silken tofu.
Transfer back to the saucepan after blended.
Heat gently, and add the vodka.
Heat for one minute, and then toss with the gnocchi.
Made this for dinner tonight with the raisin and pine nut collards on the side. Sooo yummy! And my non-vegan boyfriend loved it too! Thanks for the recipe.
I made this last night and it was yummy! BTW it makes A LOT of sauce! Next time i make it i want to try it with cashew cream! any one make it that way yet?
yes, yay! i love it with cashew cream! much creamier than with tofu, in my opinion. and i try not to eat too much soy, so it is a great alternative.
I made this for dinner tonight... it was sooooo good! My husband was especially happy because vodka cream sauce was his favorite before going vegan. This recipe is a keeper! YUMMMMMMMMMMM!

Reviving this one again to tell you how much I love it. I made it again and this time added more veggies and tossed it with some brown rice corkscrew pasta. So delish! I am going to try it as a pizza sauce too. No need for a cheese alternative!
I am having friends over for dinner tonight so I decided to change the recipe a little and use organic whipping cream for the tofu and had to use a little salt as well.. it's cooking right now, I'll let you know how it turns out. (I know you may be thinking that I got it all wrong but I am "converting" slowly..)
