Daiya mozzarella and cheddar cheese are my favorites and tastes pretty good melted. Have to say it's the best tasting vegan cheese I've had so far even though I haven't tried Dr. Cow's, (it's more of a spread which I may use for crackers with the holidays coming), or that recipe link Amy posted for vegan almond feta cheese spread which I just bookmarked while doing this edit.
Helps if I search first, Interesting & will try a few, just hoping they don't taste anything like goats cheese.
For anyone in the MidWest... well, Ohio, so far, or in most of the South, there is a store called Earth Fare with a bunch of vegan alternatives. Field roast products, vegan cheeses galore - including one I haven't seen mentioned in awhile called "we cant say it's cheese".... I have only had it on crackers (yum), but a sales rep said it would goo and melt deliciously baked on a sandwich or in a maccaroni dish. It's oatmeal based, so I think it is soy free too. I liked it.
i know i've tried daiya cheese on pizza and although it did melt and stretch, it was very creamy....it kind of freaked me out a bit. the taste was good, but it's just that really creamy texture that i'm finding it hard to get around.
Teese cheese is way better than daiya :)
