This is the first recipe you have to try!  If you think that vegan recipes can't be amazing, this will prove you wrong.  They are insane!  Before I went veggie, I was a major Reese's Peanut Butter Cup addict.  I was so sad when I thought I would have to give them up forever.  Regular Reese's Peanut Butter Cups are obviously not great for you, but these veg ones aren't nearly as bad.  If you are looking to lose weight, or you are a superhero, don't have these every day....but having them every once in awhile will make you soooo happy.  Not concerned about weight?!  Enjoy these a few days a week.  If you are a flirt or a full-on vegan, go nuts!  Let them replace your naughty desserts.   Bottom line is, make them....try them.  I dare you not to love them!

MAKES 12

INGREDIENTS
1⁄2 cup Earth Balance butter
3⁄4 cup crunchy peanut butter
(preferably unsweetened and unsalted)
3⁄4 cup graham cracker crumbs or 10 graham cracker squares
1⁄4 cup maple sugar or other granulated sweetener
1 cup grain-sweetened, nondairy chocolate or carob chips
1⁄4 cup soy, rice, or nut milk
1⁄4 cup chopped pecans, almonds, or peanuts

STEPS
Line a 12-cup muffin tin with paper liners. (If You Care makes unbleached liners made from recycled paper.)
Set aside.
Melt the butter in a small saucepan over medium heat.
Stir in the peanut butter, graham cracker crumbs, and maple sugar and mix well. Remove the mixture from the heat.
Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.
Combine the chocolate and milk in another pan.
Stir over medium heat until the chocolate has melted.
Spoon the chocolate evenly over the peanut butter mixture.
Top with chopped nuts.
Place in the refrigerator to set for at least 2 hours before serving. 

They are great soft, but even better a little firmer!

I had trouble finding honey free graham crackers too, so I substituted vegan animal crackers (Whole Foods 365 brand). Everyone loves them and I have made this recipe at least 6 times. For a fancier Thanksgiving twist, I added shredded coconut to the peanut butter mixture! YUM!

i bought gluten free corn flakes and crushed them. i've made them with graham cracker as well, and i think the texture of the corn flakes were actually better. give them a try and see whatcha think:)

Has anyone doubled the recipe or even tripled it for a large party or should each batch be made individually? I haven't tried these yet because I have to get all the GF ingredients first, but I can't wait! They sound (and look) absolutely delicious!

I have been superhero vegan for two years.  I have resisted the peanut butter cups until now - I made them.  Quick - send somebody over to take them away.  They are delicious and now I have fallen off the wagon.  Say sugar anyone?  My advise - make them, have one and give the rest to your neighbors.

I made 3 batches of these for a New Year's Eve party this year, and they were a huge hit.  

I had no trouble finding grahams without honey at Central Market. They said Honey Grahams, but looking at the label, they had no honey in them.  I couldn't find maple sugar, so I used turbinado. This wasn't the best option because it didn't dissolve in a timely fashion.  I also had to adjust the graham cracker crumbs up because the Central Market all natural peanut butter that I used for the first 2 batches was a bit thinner than the other brand.  I considered just tripling the recipe instead of doing it 3 times, but it really was easy allowed me to adjust along the way.

The serving is huge.  I think next time I will either put 1tb of peanut mix in the cups and spread the recipe out over 24 cups (this would require doubling the chocolate) or getting mini cups and doing that.
