easy, healthy kale chips!

Kale Chips

I found this recipe on Kind Lifer Sammi’s blog Vegan Pandamonium, and I thought I’d share. I haven’t tried this, but they look so easy, and yummy - such a good alternative to potato chips!
 
Crispy Kale Chips

Ingredients

  • 1 bushel of kale (fresh, not pre-cut)
  • 1 Tbsp olive oil
  • ½ tsp salt

Steps

  1. Preheat oven to 350 degrees
  2. Rinse and dry the kale well
  3. Rip up the kale into bite-size pieces
  4. In a large bowl, massage the olive oil and salt into the kale - you may want to add or use less salt depending on your taste
  5. Spread the kale on a baking sheet so that none of the pieces are on top of each other
  6. Bake for about 18 minutes until really crispy

 Now, snack and share!

I make these all of the time. Sometimes, I add chipotle paprika or chili flakes for an extra kick. They are my favorite snack.

 

If you don't want to use oil or miso paste, what can ypou use instead?

I've made delicious kale chips with just a bit of balsamic vinegar and some sea salt. You could probably use another vinegar and it would work out as well. Another idea is to coat them in some thinned out tahini, or maybe making a marinade with tamari and some of your favourite spices.

Thanks for this recipe!  I made them last night and loved them, so did my skeptical husband : )

I definitely added too much salt, I was surprised at how they really don't need that much seasoning.  I tried one batch with the balsamic idea and that was great, thanks!

Another idea could be a sprinkle of that "vegan parmesan"...

Yum!

I make mine with a sprinkle of garlic powder, chili powder, nutritional yeast, and sesame seeds. So yummy! Sometimes I cook them in the oven just enough so the kale is roasted and not a chip consistency. You can then eat it with a fork. Gotta go and buy more kale now :)
