I found these recipes that Kind Lifer Katie B. posted in the forum, and they both look so good. I love the idea of a yummy, nutty banana bread. I want to try both of these out soon!

AGAVE NECTAR BANANA BREAD

INGREDIENTS
3/4 cup Agave Nectar
1/2 cup Earth Balance butter spread
Egg substitute for 2 eggs (2 tablespoons ground flax seed and 6 tablespoons of water, mixed)
3-4 very ripe bananas, smashed
2 cups whole wheat flour
1 teaspoon baking soda
Chopped nuts (as many as you like)

MAPLE SYRUP BANANA BREAD

INGREDIENTS
1 cup 100% pure Maple syrup
1/2 cup Earth Balance butter spread
Egg substitute for 2 eggs (2 tablespoons ground flax seed and 6 tablespoons of water, mixed)
1 teaspoons vanilla extract
3-4 very ripe bananas, smashed
2 cups whole wheat flour
1 teaspoon baking soda
Chopped nuts (as many as you like)
Raisins (as many as you like)

STEPS FOR BOTH
Mix ingredients in a bowl in the order given.
Pour into a greased loaf pan.
Bake at 350 degrees F for 50-60 minutes.

Kind Lifer Run4Fun substituted the ‘egg substitute’ with applesauce, and baked the mix in muffin cups instead of a load pan.

T dunne  added a chocolate topping by melting some carob chips with a splash of soy milk, and drizzled it on top.

I made the maple syrup version, since that's what I had at home.  Instead of vanilla extract, I used lemon extract and added the zest of one lemon.  It was delicious, and a very nive fresh taste for summer.  I love the recipies that are posted-  it keeps me excited about trying new food. 

Thanks for the wonderful recipe!  Luckily, I had most of the ingredients so I made both versions.  I used 1/2 cup organic applesauce as an egg replacement and drizzled dark chocolate on top.. so yummy!

i made the agave version, but instead of earth balance butter i used extra virgin olive oil, added some cinnamon, and only used 1/2 a cup of agave instead of 3/4 cup. it was so delicious!! it seriously tasted better than banana bread made with eggs and butter!! my mom absolutely loved it as well!

The agave syrup banana bread recipe was awesome.  I only had 2 bananas left but figured I'd try it.  The mixture was a little thick, so I added about a cup of organic peach applesauce.  It turned out amazing.  Thanks for the recipe.

I cannot have gluten.   Booo.  Any suggestions to sub the wheat flour, etc?

yesterday I cut down three stalks of bananas and will be needing to use them soon.  Could someone help me with where this recipe is?  I new to this site and still learning the ropes.  mahalos for the help!  Aloha!

I was wondering if there was any alternative to the Earth Balance butter? 

I have a fantastic banana bread recipe; incredibly tasty made of simple ingredients that are good for you.  It was my mom's recipe, and was already very healthy before I veganized it.  It's good baked as a loaf or as muffins. 

Would this count as superhero?

1 cup mashed bananas (2-3 medium)
1/2 cup oil (canola or other)
1/2 cup brown rice syrup (or other sweetener such as honey or brown sugar)
2 eggs (vegan version = 5 tablespoons pre-ground flaxseeds + 6 tablespoons water, combine and let sit for a few minutes)
1 cup spelt flour
1/2 cup cornmeal
1/2 cup oatmeal
1/4 cup wheat germ
1 teaspoon baking soda
1/4 teaspoon salt

Mash bananas in one bowl.  Combine the oil and brown rice syrup in another bowl.  Add the "eggs" to the oil/syrup.  Combine dry ingredients in a separate bowl.  Alternately add dry ingredients and oil/syrup mixture with the bananas until all combined.

Bake in a greased loaf pan for 1 hour at 350, or in greased muffin tin for 35 minutes.

Give it a try - I swear it's amazing!
