I have to share these cookies with you! They are so delicious and yummy.  The understudy in the play that I’m in right now is this great girl named Monica McCarthy.  She was also my understudy when i did this play in Los Angeles, and we would always share food.  I would bring in tons of food, because I was testing recipes for The Kind Diet, and she always loved everything!  I basically fed her yummy vegan food for 3 months.  After that, she and her boyfriend became vegan!  Her boyfriend’s arthritis has been cured, and she is now becoming a nutritional counselor.  How awesome is that!  


She brought these cookies to work yesterday... They are a recipe from a cooking class that she is taking. They were soooo good that I HAD to get the recipe for all of you!  Let me know how you like them!
 


DELICIOUS AND EASY THUMBPRINT COOKIES
 

SERVES 10


INGREDIENTS
1 cup rolled oats
1 cup almonds
1 cup spelt flour

1/2 cup corn or safflower oil
1/4 cup maple syrup

1/4 cup brown rice syrup
Fruit-sweetened jam of your choice


STEPS
Preheat the oven to 350 degrees F.

Combine the oats and almonds in a blender or food processor and blend until they have the consistency of flour.
Pour into a large bowl, and add the spelt flour.
In a small, separate bowl, mix the oil, maple and brown rice syrup together.
Combine the wet and dry ingredients and mix well.

Make 1 inch balls with your hands and press flat onto a cookie sheet.

Make an indentation with your thumb into the center of each cookie.

Fill each cookie with a teaspoon of jam.

Bake at 350 degrees for 15 minutes.
Cool and enjoy!

Made these today-- so unbelievably good!  had to take the remainder to my son's preschool for the teachers, otherwise I was going to eat them all!
my sister, liza, is a photographer, but should be a professional vegan baker.  she makes me the yummiest treats all the time and made me these the other day.  AMAZING!  we're gonna make some for our dad (and by that i mean i'm gonna watch her make some cause i wouldn't wanna interfere with her baking brilliance) to get him on the bandwagon (a tough feat) cause his all-time favorite cookies are linzer tarts and these are SO MUCH BETTER.thank you!
These look amazing, yummy, and the recipe is so simple.  We have a neighborhood potluck today so I just may add this to the menu.  Can't wait to share vegan food.

I made these an hour ago... amazing!  I used molasses instead of the brown rice syrup.  I worried that the taste would be to strong since I don't like molasses, but it was fine.  Just use half the amount of molasses, in this case 1/8c. 

I used rasberry preserves and added half of a cherry to the center of some of the cookies.  The cookie part has a hint of sweetness which perfectly balances the tart sweetness of the preserves and cherry.

I would really love to try this recipe but can anyone suggest an alternative for the almonds?  My son has a nut allergy and I would love to share these with him.  Has anyone tried it with "soy nuts" or sunflower seeds?
i would use another form of flour... you're really just processing the almonds into almond meal, so I could see any other type working.

I made these cookies last night and everyone in my office devoured them!  I LOVED telling them they were vegan after they ate them :) See people... you can eat kind and love it :)
