I found another recipe on Little House of Veggies that looks so good. It is a recipe for Chocolate Fudge Muffins that was adapted from one of Bethenny Frenkel’s recipes.

Morgan from Little House of Veggies wrote, “These chocolate fudgy muffins are my very favorite sweet snack to make, and they are pretty much guilt free, being made entirely from whole wheat and having virtually no fat aside from the vegan chocolate chips and a single teaspoon of oil! This recipe is just too good not to share with you all”.

Morgan’s Chocolate Fudge Muffins

INGREDIENTS:

Cooking spray
1 cup unsweetened applesauce
1 teaspoon canola oil
2 teaspoons vanilla extract
3/4 cups white whole wheat flour (this type of flour works best)
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup vegan chocolate chips

STEPS:

Preheat your oven to 350 degrees F.
Spray 8 muffin cups on a muffin tin
Mix the applesauce, 1 teaspoons canola oil, and vanilla extract.
In a separate bowl, mix the dry ingredients.
Then combine the wet ingredients with the dry.
Fill the 8 muffin cups, and bake for 20-25 minutes.

Morgan also says to be careful not to overcook the muffins. They are done when they are barely firm to the touch on the top. Let them cool for 10 minutes or so before eating them.

hi, no sugar? is it sweet?

 

On her actual website it includes sugar--I think 1/2 cup of Turbinado sugar.  Check it out--just google Little House of Veggies
