
I found another recipe from Kind Lifer Sammi Mclean’s blog, Vegan Pandamonium, that looks great. Sammi posted this version of 'Tempeh Enchiladas’ on her blog... I can’t wait to try them!
And look how cute Sammi is! I want to meet her and eat with her.

Sammi wrote, “This recipe was shared with me a long time ago by one of my bffl’s, Lindsey Mills. I have made it numerous times since and it is seriously soooooo good. It’s nice and mildly spicy, not to mention suuuuper hardy and filling!”
INGREDIENTS
1 package of tempeh
1 can diced tomatoes with green chiles, drained
1 packet taco seasoning
1/2 onion, diced
2 garlic cloves, minced
1 can of beans of your choice (Sammi used vegetarian refried beans)
Flour tortillas
Nutritional yeast to garnish (optional)
1 jar of your favorite tomato sauce
STEPS
Preheat your oven to 350 degrees F.
In a large sauté pan, sauté the onion and garlic with a little olive oil until fragrant and translucent.
Add the can of tomatoes and crumble in the tempeh.
Mix in the taco seasoning and let it all incorporate for about 5-10 minutes.
In a separate sauce pan, let your beans heat up.
Once the beans are hot and the tempeh mixture is settled, start assembling your tortillas.
Spread out the beans first on the tortilla, and then add the tempeh mixture on top.
Roll it up, and place in a casserole dish.
Repeat (Sammi made 5 enchiladas in one casserole dish).
Pour the tomato sauce over the enchiladas (you don’t need the whole jar, just enough to cover them evenly)

Put the dish in the oven for about 15-20 minutes.
Sammi also said that if you want to go wild, try adding some vegan cheese and/or sour cream on top.

I made these last night and they were a total hit with my family! Yum!
I was going to make them this weekend! I just went to the store and bought more stuff for them. But instead of tomato sauce, I bought green verde sauce to put over it. I also bought "firmer" tortillas because the flour tortillas from Trader Joes are too soft- they break really easily. I don't cook- ever- let alone Vegan dishes, so it should be an experiment. I want to make the Vegan Coconut Brown Rice Crispy treats for a dessert.
This dish was fab! The whole wheat tortillas were a bit of a treat for our fairly macro household, and they went down like the house was on fire! Made our own taco seasoning out of organic spices:
Ingredients:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

I made them this weekend, and mine didn't turn out too well. I think they would have been good, however, I smelled and tasted the Tempeh before I incorporated it into the tomatoes, etc., and it smelled horrbile, like spoiled food, but I guess that is technically what "fermented" soybeans are. I think that is what ruined it for me.
I feel like I am the only person that has this issue?
I am slowly realizing that the "fake meat" thing might not be for me, which excludes so much fun receipes, and makes it harder to stay on track. :(
Last Friday I made "tacos" with soy 'ground beef', and that wasn't too good either. I'm running out of ideas and morale.
@Megan, I understand about the fake meat (I think I responded to another one of your posts about the tempeh/tofu debacle :-) ), but tempeh, to me anyway, is not a "meat" replacement at all. It doesn't taste like meat, doesn't have the texture of meat...it's really it's own thing! I think if you go into it expecting it to be something it isn't, you will be disappointed. The first time I bought it and opened it up, I was very suspicious. But, I sliced it into strips, sauteed it with some shoyu and veggies, and just tried it...and to my astonishment, I really liked it. Just try not to compare it to something that it isn't, and I think you'll be more open to trying it. Good luck!
*btw, I made this recipe on Friday, and it EXCEEDED my expectations...super yummy! And, my omni (almost converted veg) fiance wolfed them down like there was no tomorrow...yay!*

tempeh is best cooked well i think. if you slice it into thin strips and fry in some olive oil and season with a little tamari or shoyu it tastes fabulous. good in sandwiches instead of meat. and yeah, whilst used as a meat sub. it is its own thing---fermented soybeans, it wasnt made to taste like meat or anything.
