June 6th was my mom’s birthday, so Christopher and I drove to see her for a surprise visit and birthday meal! I did all of the cooking and we had a great time hanging out with my parents and their dogs.

Here’s the meal I made:

  • Watercress, Beet, and Heirloom Tomato Salad (p. 173 in The Kind Diet)
    *For this salad, we soaked the beets in water to clean them. This is a great way to wash them and save water!
  • Radicchio Pizza with Truffle Oil (p. 144 in The Kind Diet)
  • Mixed Berry Cheesecake (pictured above; p. 192 in The Kind Diet)

Alicia, you rock. Seriously. The world needs more people like you (like all of us who care). I love your book and think it's so cool that you teamed up with Jessica Porter since she is awesome and halarious!

I have a few comments/questions:

- I don't have your cook book infront of me, but there is a kabuki (?) squash stew recipe that I have made a few times now and the beans never cook! It says to roast them first and they will crack and split and then you add them to the stew. They stay hard??? Should I soak them first?

- I love the whole wheat biscuits. I make two batches, one with a fruit mixed in and the other with dried rosemary. So good!

- I discovered Mochi bc of your book and fell in love! Sadly, I can't get it anywhere in my area anymore : (

First, I am not a Native English Speaker, so I hope nothing of what I am about to write cause you any offense :)

I am a fanatic of dogs, I am from Costa Rica and we care a lot about of environment  I usually get crtics from my family bcs they say am crazy about recycling...ha haha.. I got your book last week, and I was like... "OK Jo, this book is not going to change your life, let's keep sane, don't throw yourself in a vegetarian lifestyle just because of a book"

I started to read it yesterday at my job.. I almost cry... I felt so depressed, but still I was feeling I need to do something, I can't just close the book -or my eyes- and pretend that my little tiny effort won't make a difference.. I called my husband almost crying and told him, I am going vegan.. (I am not trying to copy u) and I need u with me, because if I cook meat for you or Jazzy (my stepdaughter) I will feel I am poisoning you.. and I just can't...

I am on page 25... :S Definetely you have made a HUGE HUGE HUGE difference by inspiring so many people to change our lifestyle habits... It's crazy! Can you imagine the chain of possitive changes is meant to happen because of your book?!!! I will definetely will make some...

Thanks for sharing those pictures with all of us!!  I cannot wait until I get your book!!!  I feel kind of pathetic in that I still don't have it,smiley-embarassed.gif but my job I had decided it was going to shut the doors and never reopen them.  And that is exactly what they did too, now with no job(but I have been actively looking) I can't buy anything.smiley-cry.gif  But as soon as I get a job again one of my purchases I want to make for myself is The Kind Diet Cookbook!!!!:~D  I really want it before the holidays roll around so I can get started in all the great cooking and baking!!!smiley-kiss.gif
