Tempeh tacos

Janah and I made these delicious tacos the other day! We used teriyaki-flavored tempeh from Rhapsody Natural Foods. You have to order it, and it’s a bit pricey, because of shipping. But if you get a few people to go in on a big order and keep it in the fridge, then share the shipping cost, it ends up being very affordable! Rhapsody also makes yummy cookies and good amazake (a mildly sweet rice beverage).
 
Anywho, here’s the recipe for the tempeh tacos!
 
Tempeh Tacos
 
Serves 2
 
Ingredients

  • 1 carrot cut into ¼” diagonals
  • 1 celery stalk cut into ¼” diagonals
  • ½ an onion cut into half moons
  • 2 T sesame oil
  • 1 t fresh minced ginger
  • 2 T brown rice vinegar
  • 1 T shoyu
  • 1 T mirin
  • 1 T brown rice syrup or maple syrup
  • 3/4 block of Tempeh (I like teriyaki flavor from Rhapsody), cut into little cubes
  • ½ green cabbage cut in ½” thick pieces
  • ½ cup snap peas cut in half
  • 2-3 scallions, chopped and blanched
  • Cilantro for garnish
  • Toasted sesame seeds

Rhapsody Tempeh

Steps

  1. Cut the tempeh into 1/2" thick slices
  2. Lightly fry the tempeh in 1 T sesame oil and set aside
  3. Saute carrot, celery, and onion in remaining sesame oil until almost tender
  4. Add ginger, brown rice vinegar, shoyu, mirin, and brown rice syrup
  5. Add tempeh to carrot, celery, and onion mixture
  6. Add cabbage, snap peas, and toasted sesame seeds
  7. Saute altogether, covering if you want to cook faster
  8. Use a Napa cabbage leaf or Swiss chard leaf as your taco shell for a nice, fresh crunch! 
  9. Top with cilantro and scallions

I love soy chorizo tacos!

Yummy.  I will add this to our menu this month.  I've been flirting with being vegan for about a month now...my husband has noticed the increased energy and AMAZING skin I now have.  He said its inspired him to also eat better and exercise more.  My 7 year old watch the Oprah that talked about veganism and he watched the segment on the beef slaughter house...after than he told me he never wanted to eat meat again.  (I will never force it on any of my children, instead I will give them the tools to make a informed decision on their own.) He LOVES Tofu Turkey italian sausage....and just about any kind of nut I bring home he eats me out of too  :)

i'm definitely going to try these next time as they are certainly a healthier version.  i wonder how they'd be with seitan in place of tempeh?

mmmm, I've been so craving tempeh tacos since I saw this post the other day. But I'm a'craving mexican style ones (the asian style ones look awesome too - another day). I'll be using corn taco shells, whipping up my own guac, and using a pinto bean-salsa to sautee the tempeh in. Not sure if I'm going to crumble it up and use it mince-like, or keep the tempeh in thin strips. hmmm...
