Braised Daikon in Mirin and Shoyu
For all your flirts or anyone new to the superhero diet, this is what a daikon looks like! Next time you’re at the grocery store, buy one and try the Braised Daikon in Mirin and Shoyu from my book (p. 271). Here’s the recipe:
  • Prep time: 10 minutes

  • Cook time: 30 minutes
  • |
  • Total time: 40 minutes
  • |
  • Servings: 4
  • 1 large daikon (roughly 1 pound but size doesn’t really matter)
  • 2 tbsp. of shoyu
  • 1/2 cup(s) of mirin
  • 1 2”-3” strip kombu
Steps
  1. Slice the daikon into 3/4" rounds
  2. Place them in a skillet in a single layer
  3. Add water almost to cover the daikon
  4. Add the shoyu, mirin, and kombu
  5. Bring the liquid to a boil over high heat
  6. Reduce heat to very low, cover pan, and simmer the daikon for 30 minutes or until all liquid has been absorbed

Where can I find Daikon, my natural foods section didnt have it, neither did the local farmers market. ?

Whole Foods, Central Market, and my local Asian Market all had Daikon. Hopefully this helps

I just made this last night and my husband who said that he hated Daikon nearly ate the whole pan. Even had some cold this afternoon and it was almost like I was cheating!
