Chocolate Chip Lactation Cookies
Vegan lactation cookies for all of you kind nursing mothers. They're so delicious that my husband eats them too! Ha ha! :)

  • 1 cup(s) of Earth Balance butter, softened
  • 1 cup(s) of sugar
  • 1 cup(s) of brown sugar
  • 4 tbsp. of water
  • 2 tbsp. of flaxseed meal
  • 2 large eggs worth of Enger-G egg replacer
  • 1 tsp. of vanilla
  • 1 tsp. of salt
  • 1 tsp. of baking soda
  • 3 cup(s) of thick cut oats
  • 4 tbsp. of brewer's yeast
  • 1 cup(s) of chocolate chips
  • 2 cup(s) of flour
Steps
  1. Preheat oven to 375 degrees
  2. Mix flaxseed meal and water - set aside for 3-5 minutes
  3. Beat together the Earth Balance butter and the sugars
  4. Add the Enger-G, flaxseed mixture, and vanilla. Mix until well blended
  5. In a separate bowl, sift together the flour, brewer's yeast, baking soda, and salt. Stir to combine
  6. Add the Earth Balance/flaxseed/sugar mixture to the dry ingredients. Mix well
  7. Add the oats. Mix
  8. Add the chocolate chips. Mix
  9. Bake for 8-10 minutes
