Crispy Peanut Butter Treats With Chocolate Chips
Here is one of my favorite dessert bar recipes, from my book (p. 184).

  • Servings: 10
  • 1 box brown rice crisps cereal
  • 1 3/4 cup(s) of brown rice syrup
  • 1 pinch of fine sea salt
  • 3/4 cup(s) of Earth BalanceĀ® Peanut Butter
  • 1/2 cup(s) of grain-sweetened, nondairy chocolate or carob chips
Steps
  1. Pour the rice cereal into a large bowl.
  2. Heat the syrup with a pinch of salt in a saucepan over low heat.
  3. When the rice syrup liquefies, add the peanut butter and stir until well combined.
  4. Pour over the rice cereal and mix well with a wooden spoon.
  5. Once thoroughly mixed and cooled to room temperature, stir in the chocolate chips.
  6. Make sure the mixture is cool, or you will end up with melted chocolate instead of chocolate chips in your treats.
  7. Turn the mixture into an 8"x8" or 9"x13" baking dish.
  8. Wet your wooden spoon lightly and press the mixture evenly into the pan.
  9. Let cool for 1 hour - if you can - before cutting into squares or bars.

I made your peanut butter treats with carob chips. They were amazing and even my dairy-loving husband agreed they were awesome! Thank you for such a yummy dessert!

I made some yesterday, I added a two teaspoons of agar agar to help bind the syrup and PB and put them in cupcake tins..SO GOOD!

I used cashew butter instead of peanut butter & added a little unsweetened coconut too. Delicious!! Definitely a new favorite!!
