Since I celebrate Christmas and the holiday season is my absolute favorite time of the year, Thanksgiving is simply a marker for me; immediately afterwards, I am free to play all the Christmas music I want and to eat fruitcake for breakfast, lunch, and dinner. This is the simplest cake recipe on the face of the earth, no skill required - and trust me, I have none - and is delicious. I've veganized it (obviously) from the one my family uses. Enjoy!

8 ounce(s) of white whole wheat flour

3/4 cup(s) of palm sugar

2 cup(s) of water

1 tbsp. of flax meal

3 tbsp. of water

8 ounce(s) of raisins (or other dried fruit)

1/2 cup(s) of walnut pieces

1/2 cup(s) of Earth Balance Spread

1 tsp. of allspice

1/2 tsp. of nutmeg

1 tsp. of cinnamon

1/4 tsp. of baking soda

1 tbsp. of baking powder
- Fill a medium-sized pot with the 2 cups of water, raisins, Earth Balance, and sugar. Bring to a boil, and then turn off and let sit until cool - for up to 8 hours. This can be overnight, it isn't strict, just as long as the raisins have time to absorb the liquid
- Heat oven to 350. In a large bowl, combine flour, baking powder and baking soda, and spices (again, to your liking)
- In another, smaller bowl, mix the flaxmeal and 3 tablespoons of water until well-blended, then pour into the dry ingredients
- Pour the contents of the pot into the bowl and mix everything together; throw in the walnuts, as well.
- Line a square ceramic baking dish with parchment on all sides and along the bottom of the dish; pour and distribute the batter evenly
- Bake for an hour - or until a toothpick inserted into the cake comes out clean. Let cool and enjoy. It freezes well, too.
