My favorite cookie ever would have to be oatmeal raisin. I think they are amazing. And due to the time of year, the smell of cinnamon will just add to the wonder that is Fall and Winter. This was my families old version, which I updated to my specified preferences. I also added a list down below of my favorite products that I use for this recipe. They can be a bit expensive, but add such depth and flavor, especially the Madagascar Bourbon Vanilla. I use that in everything pretty much.
Also, I never wrote down the exact prep time, cook time, or servings. So, I wrote down what I could remember from memory. It normally takes me about 5 minutes to mix everything because I know it really well. But, it should take about maybe 10 minutes to mix and then the other 10 to sit. So, I put it around 23ish minutes. Cook time only takes 13 for me, and you let them cool for 7 in the pan and then again on a wire cookie wrack. We've never waited 30 minutes till we started eating them, but I figured I'd be on the safe side.

*I use Vietnamese Cinnamon from King Arthur Flour
*I use Organic Coconut Palm Sugar from Live Superfoods
*I use Madagascar Bourbon Vanilla from King Arthur Flour
*For Dark Brown Sugar I use a brown sugar called ‘Dark Muscovado Sugar” from India Tree. You can buy it online from Amazon. Or go to http://www.indiatree.com to find a store near you.

3/4 cup(s) of whole grain spelt flour

1/2 tsp. of baking soda

1/2 tsp. of fine sea salt

1 tsp. of cinnamon

1/2 cup(s) of dark brown sugar

1/4 cup(s) of coconut palm sugar (or sugar of your choice)

2 tbsp. of maple syrup

1/4 cup(s) of applesauce

1/4 cup(s) of coconut oil
-
1/2 tsp. of vanilla extract

1 1/2 cup(s) of rolled oats

1/2 cup(s) of raisins
- Preheat oven to 350 degrees Fahrenheit
- Line two baking sheets with parchment paper
- Mix flour, baking soda, salt, and cinnamon in a medium bowl
- in a separate medium bowl mix the coconut sugar, brown sugar, maple syrup, coconut oil, and vanilla
- Add the flour mixture to the wet mixture
- Stir in the oats till evenly distributed
- Stir in raisins till evenly distributed
- let the mixture sit for 10 minutes
- Scoop a tablespoon of the mixture and place onto the prepared sheets and repeat till the sheets are full.
- Bake for 13 minutes (more or less depending on your oven, so keep an eye on them)
- Let cool on pan for 7 minutes
- Move to wire cookie rack to cool completely
