Steamed Broccoli with Caramelized Onions
This is one of my favorite, hearty, go-to meals when I'm a little bit strapped for cash. It's ridiculously filling, healthy, and never burns a hole in my wallet. I like to top it with vegan Parmesan and whatever hot sauce I happen to have in the fridge.

  • 1 head of broccoli, or 1 bag of the frozen stuff
  • 1 white or yellow onion
  • 1 pinch of of salt (or to taste)
  • 1/2 cup(s) of vegan Parmesan (optional, depending on how cheesy you want it)
  • 2 tbsp. of any brand hot sauce (again, optional, depending on your spice tolerance)
Steps
  1. Dice up the onion, and get the pieces caramelizing in an olive oil coated saucepan. I like to get the onion going first, so that they get nice and caramelized while the broccoli is steaming.
  2. If your broccoli is frozen, follow the instructions on the bag. If it's fresh, dice up the head of broccoli and cover it in an appropriate sized pot with water. Bring to a boil, then lower the heat to a simmer, cover and leave on the stove for 6-8 minutes, depending on how firm you like your veggies. Drain. (Sometimes, depending on how much of a hurry I happen to be in, and the size of my saucepan, I like to throw the broccoli in with the onions for a few minutes to maximize the flavor, and maybe crisp everything up a bit more).
  3. Mix everything together, add the salt, and top with whatever else suits your fancy. Dig in!
