1 1/2 cup(s) of whole wheat pastry flour

1 cup(s) of all purpose flour

1 tsp. of baking soda

1 tsp. of baking powder

2 tsp. of dry ground ginger

1 tsp. of pumpkin pie spice

1/2 tsp. of salt

3/4 cup(s) of maple syrup

1/2 cup(s) of safflower oil

1/4 cup(s) of molasses
- Preheat the oven to 375 degrees
- Combine the flours, baking soda, baking powder, ginger, pumpkin pie spice, and salt in a large mixing bowl
- In a separate bowl whisk together the syrup, oil, and molasses. Add wet to dry and combine.
- Roll out dough to desired thickness between two sheets of parchment paper and cut dough with a cute Christmas cookie cutter! (or any cookie cutter you chose)
- Place cookies on prepared baking sheets and bake for only 10 minutes!
